The Cellina di Nardò olive, also known as Saracena or Scurranese, is widespread in the Lecce area of Puglia, where its cultivation covers some 35,000 hectares.

The grapes come from 100% Italian vineyards in order to maintain control of the raw materials. The freshly harvested grapes are pressed in order to separate the solid parts (such as skins, pips…) from the grape must. The must obtained from the pressing is then cooked to obtain a thick, sweet syrup.

This variety of olives is native to the Cerignola area in Puglia and is a very large table olive.

Our purées contain only fresh tomatoes grown in open fields. We harvest the tomatoes one by one in July and August and process them within a few hours.
