Our purées contain only fresh tomatoes grown in open fields. We harvest the tomatoes one by one in July and August and process them within a few hours.

‘Peranzana’ seasoned olives (an olive variety whose area of production is the province of Foggia) are harvested when fully ripe then marinated in Extra Virgin Olive Oil, salt, garlic, chilli, parsley and lemon rind.
The selection of the company’s best grapes, harvested across a viticultural estate extending over hilly land for over 100 hectares, allows the production of this wine of great stylistic precision and harmony. The controlled drying of the harvested grapes which lasts for a hundred days produces the great aromatic intensity of dark fruit and undergrowth that we find in this Amarone 2017.
The grapes come from 100% Italian vineyards in order to maintain control of the raw materials. The freshly harvested grapes are pressed in order to separate the solid parts (such as skins, pips…) from the grape must. The must obtained from the pressing is then cooked to obtain a thick, sweet syrup.
