The Cellina di Nardò olive, also known as Saracena or Scurranese, is widespread in the Lecce area of Puglia, where its cultivation covers some 35,000 hectares. It is harvested fully ripe with complete veraison (change in colour) in November after which it is placed in brine for a few months to reduce bitterness. When mature, it is purple in colour, veering towards black. It is rather small in size but has a very distinctive flavour that is ideal for enriching dishes containing wild herbs, perfect for making pizzaiola sauce and superb for flavouring the famous stuffed bread bun from Salento called puccia.
