This variety of olives is native to the Cerignola area in Puglia and is a very large table olive. While its origins are uncertain, it reputedly derives either from the cultivation of the ‘Orchite’ olive introduced by the Romans or it was introduced in the 1400s by the Aragonese during the years of Spanish domination. Exclusively hand-picked without the aid of mechanical means, this olive is particularly large, oval in shape and has a high pulp/stone ratio. Its crisp, fresh qualities make it ideal for adding to aperitifs and cocktails. The typical flavour is obtained from a fermentation
carried out according to an ancient Sevillian method.
